Protein Pancakes Recipe

My friends call them Chris-Cakes. Here is my secret recipe for my healthy protein pancakes. I bring them to work and snack on them throughout the day. They are great with peanut butter & banana, or plain. They are also a good post-(or pre-)workout meal. I usually don't measure my ingredients, but have taken the time to do so for you. I will add the nutrition in later.
Place all of the following in a blender: 5 egg whites 1/2 cup non-fat Greek yogurt (or tofu) 1/2 cup non-fat cottage cheese 1 scoop of vanilla protein powder (or 1/2 cup powdered non-fat milk) 2 tablespoons vanilla 1 tablespoon cinnamon 1/2 serving Stevia natural sweetener 1 banana (or 1/2 cup of applesauce) Add: 1/2 cup regular oatmeal 1/4 cup walnuts Blend until smooth (if mix is too thick to blend, slowly add milk until smooth). Pour into large bowl and stir in another 1/2 cup oatmeal, 1/4 cup raisins, and 1/4 cup chocolate chips. Add more oats until you reach the desired consistency. Cook on a griddle or in a pan like regular pancakes. Makes about 16 pancakes. I make 2 or 3 batches at a time and freeze them. I also vary the recipe with different flavors of protein powder and different fruits. Get creative!
